About the Author

Yan-kit So (1933–2001) was a well-known Chinese cookery expert who successfully demonstrated her special techniques and recipes at leading London cookery schools, including Leith’s School of Food and Wine. Born in Chungshan, China, raised and educated in Hong Kong, and later in London, Yan-kit spent some time in India and the United States but lived most of her life in London. She is the author of numerous books and articles on Chinese cuisine and has contributed recipes and features on regional cooking to Robert Carrier’s Kitchen. She held a PhD in history from the University of London and translated several Chinese short stories for publication by the Chinese University of Hong Kong.

This cookbook has many of the "famous" Chinese dishes in it, in what looks like reasonably authentic styles (more actual Chinese than American-Chinese). It also has even more enticing dishes that are not as common in the West.I am on a personal quest for a reasonably easy yet delicious hot-and-sour soup, and while I have a number of Chinese cookbooks of varying styles and authenticities, this is the one I'm starting with. And while perusing it, I've found a bunch more recipes I want to try...The directions are very clear and well-described. Most have good photos. There is an excellent section in the beginning that not only lists things like the vegetables called for, but shows pictures of them to make them easier to identify in the wild.It's not as comprehensive as Tropp's, but it's more accessible and has lots of delicious ideas!Edited to add: We just made the hot and sour soup from this, and it is AMAZING. We did dress it with a bit of hot sesame oil. We just used canned low-sodium chicken broth, and even so- truly splendid! A little bit fussy to make, but not hard, and the results are gorgeous!

As far as the text is concerned, this is a five-star cookbook if ever there was one. For the familiar Chinese classics, it remains probably the best English-language source available, with creditable versions of every dish it includes, and some recipes (the sweet-and-sour pork, for instance) that are unmatched elsewhere. Yet, in contrast to earlier editions, this 2006 British republication now has problems in typeface and layout. Unlike the 1998 American "DK Living" edition, where ingredients and recipes are printed in an easy-to-read bold typeface, the type used in the 2006 hardcover is small and thin; especially in the list of ingredients, the squeezed-together type is very hard to make out, and the fractional amounts can only be read (by me, at least) with a magnifying glass. Moreover, before I gave up, I found at least one instance where the centimeters-to-inches conversion was way off ("¼ inch" as the thickness of the pork cubes in that sweet-and-sour recipe). Then there are the illustrations, usually the glory of a DK cookbook. In the "DK Living" edition, there are pictures of every dish, and they are breathtakingly styled and photographed; they are a lesson in how to make Chinese food look delicious and elegant without the vegetable cutouts or background chinoiserie of lesser publications. In the 2006 version, only some of the dishes are pictured; most of its best photos (the "ingredients" section at the beginning of the book) are those that appeared in the "DK Living" edition, and only the photo of Szechwan duck with lotus rolls is an improvement on the older picture. For the rest, the shallow-focus, hyper-colorful photos may be the current cookbook standard, but they don't measure up to the more austere beauty of the "DK Living" illustrations; they can misrepresent the recipe as given (for instance, the dark soy in the sweet-and-sour fish produces something much browner than the bright red sauce shown); and the sloppily shredded scallions atop the pang pang chicken look downright amateurish. Finally, the ingredient photos (and recipes) in the "DK Living" edition are accompanied by the names in Chinese, a useful addition for Chinese readers or when shopping. Everyone interested in Chinese cooking should own this book; but the "DK Living" edition, a sturdy, well bound paperback, is the one to get.

This hardcover version contains a lot more recipes than the original paperback edition. The layout is also slightly different but it is the recipes that counts as this is probably the best authentic Chinese cook book written for the English speaking audience. The instructions are clear and concise with many useful pictures.A must have cookbook if you are interested in real Chinese cooking and not some watered down adaptation catered to the Western palette.

Missed this book entirely. Was reading an interview with Fuchsia Dunlop author of Every Grain of Rice: Simple Chinese Home Cooking who mentioned this book and another by Yan Kit were several that had great influence on her. The book is excellent I'm enjoying reading it and making dishes from it.

I love DK Eye Witness books, so I bought this one for my son, who is interested in learning how to cook as a professional chef. Being a visual person myself, I thought this would be a good addition to his growing reference library, as it contains all kinds of PHOTOS describing various types of noodles, spices, Chinese cooking instruments, procedures, etc. It is also very clearly written, and my son has informed me he thinks this is a wonderful book and would be extremely helpful for anyone trying to prepare different Chinese dishes.

I really love it, I even drove 90 miles to the nearest Asian superstore to buy ingredients! It is more than just a book of recipes, it introduces you to an ancient culture in a brand new way. There are a lot of pics that help you identify things like golden needles and a dozen or so essential sauces and pastes.I especially enjoyed the 'Fish Fragrant Eggplant' It neither smells or tastes like fish, I love the explanation of the name!

This book is such a gem. I only wish I had discovered it years ago when it was first published. Yan Kit So is intelligent and straight forward, easy to follow and to understand, I wish I could have met her! I received such an education just from reading this book and will continue my quest of making each and every recipe in the book; so far not one has let me down (most have made me a little fatter, he he). I will also be collecting every other cook book she has either written or co-written.

Real classic with some minor updates. I love this book.

The recipes are inspiring.

I have seen the photographs of Jacob Riis in the real and was very disappointed to see them so poorly reproduced in this book. Documenting impoverished NYC in the late 19th century what Riis is most known for and his photographs were an important part of that work.It's possible I didn't do my homework here but it is a good reminder of one of the shortcomings of buying books online. Had I picked this up in a bookstore and seen how poorly the photography was represented, I would not have bought it. I'm interested in the story but the photographs tell so much of it and are in every way as important as the words.

This a Very, Very, cheaply copied, version, stolen from the original book. The clowns who "copied, and pasted" paragraphs from the original, couldn't even bother to do it correctly. Typos are rampant. A four year old could've done a better job. The pictures are smudged, and blurry. They obviously were out to make a quick buck. And they even had the nerve to print when they made it ( when you order it, they print it, off of their copy machine).Word to the wise... DO NOT BUY A BOOK FROM THIS PUBLISHER.

Ok, if you read the whole description of this edition, you will see at the very bottom that this is a special reprint of a specific edition that didn’t include any of the photos... but I sought out this book because it was called an important piece of photojournalism...Half of the point of the original book was the photos, so I had not expected that there was going to be an edition that removed the photos. The text is still important, but repeoducing a collection of photos without the photos is cheap.

Riis had intimate knowledge of the slums of New York having lived there briefly after his arrival from his native Denmark. He experienced a gradual worsening of his circumstances, hunger, theft and rejection. After finding employment as a newspaper reporter, Riis experimented with photography and he was able to document the overcrowding of tenements, the dismal conditions of many dwellings, shiftless drunkards, decrepit alleys and groups of newspaper boys (shoeless!). Meticulously documented conditions, census figures, and income of his subjects reveal a horrendous picture of "the other half" of New York. Separated into chapters devoted to the living quarters of the various immigrant groups (Irish, Jewish, Italian, Chinese etc.), he cannot escape some stereotypes - the money grubbing Jew, the dirty Irish, the "almost" clean Germans - as evidenced in the respective tenement blocks. From overcrowding, starvation wages, dismal hygienic environment - no water in the summer, smallpox, tuberculosis, measles, typhoid, cholera, on to little schooling, malevolent landlords. Then, finally, there might be a way out ... Riis writes about some semi-enlightened landlords, who make a good return on their investment while providing decent living conditions. Yet, the immigrants keep coming, the slums are always there, An enlightening book. Thanks to the photographs the horrendous conditions are made clear. The Kindle edition was a scanned version of Riis' 1890 study complete with photographs and appendices.

Wonderful book, I got it since my great g-parents, grandparents and parents came from the Victorian to 1935 era of in Manhattan. They left Ireland to make their fortune here. I was aware of some of the poverty and conditions, but this book really shows how awful and harsh the immigrants had things and especially their children living sometimes on the streets. They suffered much, and people have no idea except for eyewitness accounts of the appalling conditions of shelters, work houses, suicides, alcoholism that they fell into after leaving their poor home countries for a better life in America. This is a classic by Jacob Riis and a window into a world unknown to most people. He attempted to alleviate the bad living conditions of poor people by exposing their living conditions to the middle and upper classes. Think things are bad now?, You should see how bad, "bas is", as you travel with the writer into ghettos and alleyways of working people toiling to just eke out an existence at long hours, often working at home making clothes and other goods to sell.

This edition is full of typos, many of which render entire sentences illogical. The whole thing is awkwardly formatted, as if the editor had no concept that the information was going to appear on the page of a book. There is no table of contents. "Special illustrated edition" is a complete lie -- the images are uselessly reproduced. Many of the images are so illegible that the typed captions within the image had to be reproduced outside the image. Not a single image in the book is adequate or useful -- I went online for worthwhile reproductions. I was truly disappointed with this edition which is in no way fit to be published. The publisher, "Seven Treasures Publications" does not seem to have a website, and offers only a fax number and an email address, nor is an editor named. This is clearly not a serious nor reputable publication company -- anyone who has bought this book, including me, was duped.

The photos from this dark time in the most poor section of a bustling immigrant city were very stark and startling. The author writes the narrative very well, and it is as if he has studied these people for themselves, by being among them. His expose was very instrumental in getting changes effected for the benefit of these poor people. When we look at these, we are reminded of the hardships that were endured by our forefathers and mothers, who came to America, willing to risk everything for the opportunity presented here. It should increase our respect for them tremendously, to understand, in stark black and white evidence, of how they were forced to live.

R. A. McWilliam, PhD, is Director of the Center for Child and Family Research at Siskin Children’s Institute, a nonprofit organization for children, families, and professionals in Chattanooga, and Professor in the College of Health, Education and Professional Studies at the University of Tennessee at Chattanooga. He develops interventions for young children with disabilities that always involve the children’s families; conducts research on the development of individualized family service plans, child engagement, and service delivery methods; and provides consultation, training, and technical assistance throughout the United States. Dr. McWilliam has served as Director of the Center for Child Development at Vanderbilt University Medical Center and as Senior Scientist at the Frank Porter Graham Child Development Institute at the University of North Carolina at Chapel Hill. He is past president of the Division for Research of the Council for Exceptional Children, past editor of the Journal of Early Intervention, and the author or editor of several books.

The book was exactly what they said it would be. It. Shipped quickly. It fit the purposes I needed it for.

Read this book with a group of high school students as part of a larger project. They were enthralled by book and stunned at the ending. It was a good starting point for a discussion on how we treat each other! Also read it with elementary students who loved it but again were stunned at the ending! Would recommend this book to everyone who wants to remind people about kindness!

I remember several years ago telling people I had just subjected myself to the scariest book of my life after reading one about the supposedly inevitable nuclear implosion of Pakistan. Well, now I've found something that tops it, even though author Ray Kurzweil seems to imagine his book as a bolt of optimism. Anyone who has ever played around with the arithmetic of compounding and exponential growth knows how crazy the numbers get as growth feeds on itself. The phenomenon is quite real in the world, and it describes everything from viral epidemics to Warren Buffet's fortune. Kurzweil applies the exponential growth paradigm to the future of technology. He sees not only change itself accelerating, but the rate of change too, if you can go back to your high school calculus and wrap your mind around that stomach-churning concept. The math starts quickly approaching infinity, which is why it's so weird. "Singularity" is a common term-of-art among theoretical physicists, who apply it to a variety of seemingly irrational constructs, such as an infinitely large mass compressed towards an infinitely small point. Kurzweil co-opts the term for his own purpose here to mean the point in time where artificial intelligence starts exceeding human intelligence. Thereafter, it takes over its own programming and, being so powerful, does a better and better job of it. Because things are already moving so fast today, the accelerating rate of change means that Kurzweil's Singularity is closer than even optimists might imagine - hence the book's title. He projects it to occur somewhere in the middle of this century. Afterwards, nothing will ever again be the same. In physics, unimaginable things start happening at singularity points, like energy explosions within black holes. Following Kurzweil's Singularity, the most garish science fiction fantasies start becoming commonplace. The combination of genetics, nanotechnology and robotics - which he refers to collectively as GNR - will transform all aspects of human existence. He believes, for example, that nanobots released into a person's bloodstream, will facilitate a comprehensive (that is to say, 100%) map of that person, including genetic code and nervous system, that can be uploaded and downloaded at will onto new "substrates". In other words, robotic copies of human beings - body, mind, memories, and (one presumes) soul - can be made that will appear indistinguishable from the originals. And for that matter, those originals themselves can be re-shaped at will, giving us all the opportunity to become brilliant, strong, happy, and beautiful. Kurzweil tells us that artificial circuits replicating themselves at a molecular level will merge with the biological circuits that constitute our nervous systems, giving rise an "enhanced" human super-intelligence. Once this starts happening, what we now call the Internet will in effect become telepathic, giving these enhanced humans instantaneous access to all available knowledge and information as they fashion their brave new world. You see how explosive this gets? And it's just the beginning. Once the process gets underway, the evolving super-intelligence keeps expanding until it permeates the entire planet and, still accelerating, eventually the universe. Kurzweil suggests that movement though time-space "wormholes" should one day facilitate rapid travel beyond our own galaxy, taking the process literally everywhere. I realize that my amateur's survey of Kurzweil's thinking here makes him sound like a crank. However, let there be no mistake: he is an accomplished scientist and a highly sophisticated thinker. MIT-trained, he's an expert in artificial intelligence and has put his ideas into practice as a successful tech entrepreneur. Most of this book is not even devoted to prognostications, but to an in-depth review of research currently underway that lays the practical groundwork for virtually everything he talks about (except maybe the wormhole business). While he makes numerous leaps of faith in taking us from here to there, none of his forecasts represent sheer fantasy. He is an extremely good writer, and while staying true to what is in fact pretty complex science, describes it all in a way that makes it reasonably clear to lay readers. For all his hardcore materialism, Kurzweil also has a whimsical streak. Every 50 pages or so, he breaks up his text with imaginary light-hearted debates among himself (appearing as "Ray"), various historical figures - Darwin, Freud, etc. - and a person named "Molly", who seems to be a student. Molly is bright, curious, skeptical, and not in the least bit awed by Ray or the others. The thing about Molly is that she appears in two separate guises: Molly 2004 (the year this book was being written), and Molly 2104, which is of course well beyond the Singularity. One of Kurzweil's key forecasts is that future science will learn how to arrest and even reverse the aging process, allowing people more-or-less to live forever at whatever age they choose. So Molly has made it through the Singularity and returned as a still-young woman to speak about it from experience. Kurzweil is fully aware of the potential downside to his vision. He devotes one long chapter to what he calls "The Deeply Intertwined Promise and Peril of GNR". He devotes another even longer chapter to responding to critics, who have attacked his ideas from every possible perspective. While he treats most criticisms respectfully, in the end he largely dismisses them all. One partial exception and the one specific fear he himself does seem to harbor is of self-replicating nanobots. He and other scientists who seriously debate such stuff even have a short-hand term for this specter: The Grey Goo Problem. Were self-replication somehow to spin out of control, Kurzweil explains to us that in a matter of days it could, in theory, consume the Earth's entire biomass and reduce it to "grey goo". This is indeed a troubling prospect, since this endangered biomass includes all of us. Interestingly, the cluster of criticisms that he responds to most gently are those arising from a spiritualist perspective. In one of his imaginary debates with "Molly", she repeatedly asks "Ray" if he believes in God. Ray surprises by dodging the question every time rather than saying no. Badgered into a corner, he finally avers: "For the sake of your question, we can consider God to be the universe, and I said that I believe in the universe." This sounds suspiciously like a yes, albeit with a twist. He then goes on to explain how his entire vision can be described as a picture of the universe "waking up" as enhanced human intelligence pervades its many corners. Religious people of an unorthodox bent might be tempted to embrace this image as God's self-realization. Fundamentalists of every stripe, however, were they to take K's cosmology seriously at all, would view it with disgust as the self-realization of God's Opposite Number. For me, the most unnerving question that this book triggers is who will control these accelerating technologies. Reading through many passages of the book, I found it hard not hard to be thinking about Nazi scientists beavering away at the design of their Master Race, or North Korean labs re-programming the neural patterns of citizens lacking enthusiasm for Kim Jong-Un. Kurzweil seems to trust in the pragmatic good will of the scientific community, buttressed by regulation. However, not all scientists have good will, and he says nothing about who he supposes will regulate the regulators. I also find it hard to see what joy or challenge there could be in a world where machines or enhanced humans dominate everything. People choosing not to become "enhanced" would either have it forced upon them or face life as a sub-species. The line between utopia and dystopia here is pretty fuzzy, and I find it a little scary that Kurzweil doesn't seem to care. Maybe I've seen too many science fiction movies. All that aside, I highly recommend this book. Decades ago when I was in college I used to describe about every other book I read as "changing my life", as we said in the day. Nowadays, no book changes my life, although the best ones still move the needle for me. Whether I like it or not, this one has me looking at things a little differently than I did before.

Any review of this book would have to start off by emphasizing that it written by Ray Kurzweil, one of the leading electrical engineers, scientists and tinkerers of the latter 20th century and early 21st century. Not surprisingly, he has an incredibly in-depth knowledge of technology, especially with respect to electrical engineering, that he brings to the table in his book. He really, really knows his stuff. That is what gives this book its “meat”. For many, especially those not interested in technical discussions, this book is not recommended. For those who are interested in such a discussion this is a book that is very much worth reading. He makes projections involving computer processing power, human – machine interfacing, energy production, etc. that are all very well worth hearing and that are all made very well. He makes the argument, well based on his in-depth knowledge, that this technology will mark a radical departure not just from the point of technology but in terms of human history and even with respect to what it will mean to be human. He believes that human physiology and technology will so interface that humans will become more cyborg than human and that immortality (at least in the de facto sense) will be reached. All of these views are all well worth listening to, especially for those with a deep interest and/or background in technology.The book does have a number of problems however that need to be pointed out. One is that his views on AI depend almost entirely on brain emulation and reverse engineering. He does not examine other ways AI may develop that do not parallel the human brain. A second problem is that he ignores the economic incentives that would drive human – machinery fusion. To him, the mere availability of the technology means it will be adopted. In this reviewer’s opinion the main driver will be economic competition a la zero sum game theory. In this reviewer’s opinion the real driver will be economic competition. If one’s competitor’s have chips that enable instant memory recall or interfacing with the internet (or a future version of it) one will not be able to compete. Like it or not, for one’s economic survival, one will have to follow the path of becoming a cyborg (or more like one).A third problem is that there is little discussion on how technology will influence human institutions. It may be the case that technology will so undermine these or prevent new ones from emerging in which humans can interact with each other without destroying each other or even functioning effectively with each other. A fourth major problem with his book is that he views the human – machinery fusion that he is predicting in very glowing positive terms. Other authors, such as George Zarkadakis in his “in our image” believe this symbiosis will be what will eventually lead to humanity’s extinction. Another important weakness of the book is its very glowing view of the benefits of human “immortality” or, at the very least a vastly increased lifespan. He seems to forget that the increased lifespan of humanity will also lead to much longer lived Stalin or Maos. Imagine a world where degenerates like these can reign not 20 or 30 years but 100 or 200.Last but not least the most important weakness of the book is the fact that it ignores the very important role that death plays in the evolution of human history through paradigm shifts. Changes in human institutions and popularity held beliefs (i.e., religions, nationalism, secularism, the scientific method, etc.) occur primarily because the young, eventually, replaces the old. A vastly increased human lifespan, never mind immortality, would go very far in undermining this. Alfred Adler put it very eloquently in the following quote: "Death is really a great blessing for humanity, without it there could be no real progress. People who lived for ever would not only hamper and discourage the young, but they would themselves lack sufficient stimulus to be creative".

I bought this having accepting a new role leading a major HRIS implementation after been away from project management for a while. It was the only guide I have referenced and between this text and good common sense, I have been completely equipped for the project. When comparing this to other books, this stands out because it covers not only the technical aspects of project management, but also the equally, if not more, important "soft skills" that through my years seems to be the difference-maker between good and great project managers. Sections with titles like "Reacting Responsibly When Changes are Requested", "Can you hear me? - listening actively", etc. are good examples of what makes this book great. Simply put, this is a complete and BALANCED text to prepare you and guide you through your next project - big or small. My copy is now dog eared and ragged as it travels in my commuter backpack every day.

A simple rendering of materials from a lot of other sources, which is of course what most Dummies books are. A good placeto start for those with no background in this way of looking at or designing a business model and how to apply this knowledge.It's worth the read and is not complicated. Read this, and if more is needed, move on to more advanced topics. Enjoy !

I have been a PMI Certified PMP for several years. I bought this book as a desk reference. Easy to find material and covers the essentials well. Great as a desk reference. If anyone is thinking about using it as a PMP Certification study guide, I would definitely say no, that is not it's purpose.

Lots of pages to state the obvious. When will the "How to Authors" learn that think books are only useful if chocked full of details or examples, not simply filling pages with "more of the same in different words". They are up front in that this book will help you pass the Project Management exams.

This is a great product! I love how they use real world examples but still reference the PMBOK. It is less dry and boring compared to the PMBOK. I would recommend this product to anyone (beginner or experienced) in the project management profession.

I bought this book because I wanted to learn the basic terminology of Project Management Professionals. I had been working as a Project Manager for smaller companies for several years, and I wanted to make the leap to bigger companies. The terminology I learned from the book helped me communicate my skills and experience to recruiters, hiring managers, and interviewers, and get a great job. As with all 'Dummies' books, this is not an in-depth analysis but a crash-course.

I bought this before I jump into a project management certification course. And this is a good quick run though.
